Brazil Nut Pesto

The main ingredient in this pesto is Brazil nuts and there is a reason for that. Brazil nuts are high in the mineral selenium. They also contain magnesium and copper. All of these minerals are important for human health. Selenium is a nutrient that has both structural and enzymatic roles in the human body. Selenium is best know for its role as an antioxidant and catalyst for the production of thyroid hormone. This makes selenium important for thyroid health.

Ingredients

1/4 cup of olive oil

1 ½ cup of Brazil nuts

2 large handfuls of arugula

1 handful fresh basil leaves

2 juicy limes

2 tablespoons water

salt

Optional: 1 tablespoon of nutritional yeast

Remove the basil leaves from stalks and juice the limes. Add all ingredients in food processor and blend for a couple of minutes. Ground until the desired consistency. Add more olive oil as needed for desired consistency.

I keep the pesto in a mason jar and it will last for about 1 week. Use it to top a mild fish such as cod or for pasta dishes. See my Skillet Steamed Cod recipe to make the meal pictured at the beginning of the blog post.
